However, the versatile and simple-to-cook scallop was well-suited to the majority of cooking methods. In the 1930s, scallops had become an integral component of the American diet. Unsurprisingly, they were a favourite among residents of coastal communities. Delicious sautéed scallops became standard fare at seaside shacks.

By the middle of the 20th century, scallops were a common menu item in French restaurants. Around this time, the Coquille St. Jacques gained widespread popularity in American fine dining establishments. The dish is composed of scallops served in their shells, butter, shallots, seasonings, cream, and cheese.

A fine-dining seafood restaurant without scallops today seems almost unimaginable. Every restaurant has its own style, whether provencal, pan-seared, or ceviche. However, baking scallops at home is an excellent method to elevate this shellfish.
