They had appropriated a local dish consisting of barley-flour pasta and water called’makaria.’ In 14th or 15th century cookbooks, macaroni-like dishes and their preparation were first mentioned, but the noodles were much lengthier than the modern elbow macaroni. In later centuries, recipes catered to the flavours and preferences of the regions from which they originated, resulting in variations on the macaroni we know today.
As the globe became more interconnected with other cultures, various types of pasta were introduced to the colonies. People began to develop a crush on this doughy noodle. Thomas Jefferson, the American ambassador to France, first sampled pasta in Naples, Italy. He even brought a pasta-making machine back to the United States, which inspired him to design a pasta-making machine with instructions.
