Nobody knows for certain who invented the ice cream cake or when it first appeared. There are numerous theories surrounding this invention. Some food historians assume that the first ice cream cakes appeared during the sixteenth century. Others believe the ice cream cake was inspired by delicacies known as ‘Bombes’ from the Victorian era, which were composed of ice cream, fruit, and sometimes cake or biscuits. Others, however, believe that the ice cream cake was devised by wealthy English lords and ladies who could afford such treats. Since sponge biscuits were used to hold the ice cream in the trifle in place, they are the first version of the ice cream cake, according to one more version of events. However, these earlier versions are not the dessert we all know and enjoy today. The current design involves baking and cooling a cake before adding ice cream to create the final product. The day itself is inspired by a profound idea. Three-time mother Johanna Jurado died in an accident two months prior to her 32nd wedding anniversary in June. As with any family, the Jurados went through a period of sorrow and then acceptance as they adjusted to their new normal. In contrast to many others, the Jurado family chose to mark a special day in honour of Johanna Jurado in response to this calamity. Johanna adored commemorating exciting new special ‘days,’ and she believed that ice cream cake enhanced every celebration. Therefore, Johanna’s youngest daughter, Jenna, devised an ingenious plan. Together with Cupcakes for a Cause, she petitioned for June 27, which is also her mother’s birthday, to be designated as National Ice Cream Cake Day. Since that day three years ago, these celebrations have been held and have proved to be very therapeutic for the entire Jurado family.
