The background of National Truffle Day
Louis Dufour is believed to have invented chocolate truffles in Chambray in 1895. This was the result of an experiment in which he attempted to create a very tasty Christmas treat. He was unaware that it would receive its own holiday. Dufour rolled ganache into a ball before dipping it in molten chocolate. His relative, Antoine Dufour, brought the recipe to England in 1902 and established the Prestat Chocolate Shop. At present, truffles are produced in a diversity of ways and with various ingredients.
The term ‘truffle’ is derived from the Latin word ‘tuber,’ which means ‘outgrowth’ or ‘lump.’ The ancient Egyptians held truffles in high regard and consumed them coated with poultry fat.
The original chocolate truffle consisted of a ball of ganache or a filling of whipped chocolate and cream, frequently flavoured and crusted in cocoa. Today, the term “truffle” is frequently used to refer to any form of chocolate filling, but the ganache is what gives the truffle its unique distinction.
However, truffles today appear in a variety of shapes and can be coated in a variety of flavorful coatings, including sweet curry, peppercorns, and paprika. The shelf life of filled chocolates, such as truffles, is approximately three to four months (unless they contain preservatives).
