How to make quark

Ingredients:

1 cup milk

1/4 cup yogurt

1/2 teaspoon sugar

1/4 teaspoon salt

1/4 teaspoon dry mustard powder

1 tablespoon cornstarch or arrowroot powder (optional)
Steps:

Heat the milk in a saucepan over medium heat until it starts to simmer. Do not let it boil. Meanwhile, mix the yogurt, sugar, salt, and mustard powder in a bowl. When the milk has heated, whisk in the cornstarch or arrowroot powder (if using). Add the yogurt mixture to the pan and whisk until combined. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Remove from the heat and strain through a cheesecloth-lined sieve into a bowl. Cover and refrigerate for at least 8 hours, or overnight. The quark will thicken as it cools.
