National Oysters Rockefeller Day 2023: History

Oysters Rockefeller is an innovation in the art of cooking oysters and is adored around the globe. The history behind this dish’s creation is fascinating.

In the late 1850s, Antoine’s Restaurant, a modest family-owned restaurant in New Orleans founded by Antoine Alciatore, specialised in dishes made with snails. At the end of the 1880s, there was a European snail shortage. Jules Alciatore, son of Antoine Alciatore, decided to replace snails with oysters sourced locally at this time. He invented a rich oyster dish by combining a butter sauce with green vegetables and oysters as the primary ingredient. It was so extremely wealthy that it was named after John D. Rockefeller, the richest man in the world at the time.

In a matter of months, grilled Oysters Rockefeller became a popular dish in both the United States and the rest of the world. Numerous chefs and dining establishments now offer their own version of Oysters Rockefeller. The original recipe is a family secret that is closely guarded. Some of the ingredients, including parsley and chives, have been identified through laboratory analysis, but the original has never been successfully duplicated. Today, Antoine’s restaurant serves hundreds of portions of this dish daily and has served millions of Oysters Rockefeller since its inception. Antonie’s celebrates this day by offering Oysters Rockefeller for $5 to New Orleans residents.
