The background of National Totally Chipotle Day

Chipotle peppers have existed since antiquity. It is as ancient as Mexican cuisine. Their appellation is derived from ‘Nahuatl,’ the language spoken by the Aztecs. It is a combination of the terms ‘chilli’ (pepper) and ‘poctli’ (smoke), meaning’smoked pepper.’ It actually originates as a jalapeo pepper, a favourite among pepper enthusiasts. There are numerous jalapeo varieties with differing degrees of spiciness. Historically, it was most prevalent in the markets of central and southern Mexico. 60% of jalapeos produced in Mexico are used for pickled products, 20% are ingested fresh, and 20% are processed into chipotle.

As the demand for Mexican cuisine increased in the northern regions of North America, jalapeo production and processing also expanded in those regions. When mature, red jalapeo peppers are hung to dry, the traditional transformation process begins. After being placed on metal grills, the peppers are smoked for several days in an oven until they are entirely dehydrated. Numerous Mexican peppers have different names for their raw and smoked or dried forms.

The procedure yields a pungent and earthy ingredient. It is best coupled with complementary flavours that complement its complexity and smokiness. Consider adding lime juice, cilantro, garlic, or a hint of sweetness. American classics such as tacos, chilli, and enchiladas pair well with their flavour. Additionally, they can be used in stews, sauces, salsa, marinades, and roasted vegetables. The applications for this pepper are limitless!
