1 egg

6 cups apples, peeled and thinly sliced
1/2 cup raisins
1/2 cup brown sugar
1/4 cup flour

1. Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper and set aside.

2. In a small bowl, whisk together egg, sugar, cornstarch, cinnamon, and nutmeg. Set aside.

3. On a lightly floured surface, roll puff pastry to a 12-inch square. Trim edges to even out. Spread the pastry with the egg mixture, leaving a 1-inch border. Dot the egg mixture with butter.

4. In a large bowl, toss apples with raisins, brown sugar, and flour. Arrange the apples over the egg mixture in an even layer. Fold the edges of the pastry over the filling, pleating as necessary to fit. Brush the edges with water.
