Konkan Mutton Curry
500 grammes of lamb should be marinated in 1 tablespoon of salt and 2 tablespoons of ginger garlic marinade. Allow it 20 to 30 minutes to unwind. After shallow-frying it in coconut oil, set it aside. Remove from heat after frying 1/2 cup of grated coconut and 1 onion in the same pan. In the meantime, dry roast in a separate pan 1 cinnamon stick, 3 cloves, 3 cardamom, 2 star anise, and 1 tablespoon of cumin seeds. Once fragrant, combine them with the coconut and onion, along with 1 inch of ginger and 5 to 7 garlic bulbs, to form a paste. Add additional oil and one diced onion to the pan. After simmering for two minutes, add the paste and the lamb. After adjusting the salt, the meat should be sufficiently cooked.
