Let’s All Eat Right Day is observed annually on February 25 to honour Adelle Davis, a prominent nutritionist, author, and game-changer in the nutrition movement of the 1900s. Therefore, we are here to put a face to some of the fundamental contributions to the field of nutrition. This sage saying, “Eat breakfast like a king, lunch like a prince, and dinner like a pauper,” is attributed to Davis.

Food can alter your disposition, communicate with your soul, and alter your self-perception. Thus, on some level, we all desire a healthy diet and are receptive to making changes that may improve our health. Therefore, it is only appropriate that there be a day to celebrate healthy eating, which will hopefully set us all on a lifelong path towards a healthier relationship with food.

Nutrition has existed as long as humans have, but it wasn’t until 400 B.C. that the Greek physician Hippocrates observed the impact food has on physical health, particularly in terms of disease prevention and treatment. The medicinal properties of ancient foods (such as the use of garlic to treat stomach ailments) and the birth of nutritional science are relatively recent developments. Beginning with the discovery of vitamins, their effects on disease were synthesised and studied. Dr. Casimir Funk coined the term ‘vitamin’ from the words ‘vital’ and ‘amine’ in 1912. The outbreak of World War I caused widespread fear of food shortages and compelled nutritional scientists to concentrate on food as a disease preventative. Around this time, the first Recommended Dietary Allowances (RDAs) were issued. Since then, nutritional science has been a rapidly expanding field of study, and none of us can escape its influence.

Let’s All Eat Right Day was first observed on Adelle Davis’s birthday as a tribute to her work and legacy. The exact date of the first Let’s All Eat Right Day is unknown. Davis’ research and publications had a significant impact on the average American consumer, despite her fair share of controversy, with bestsellers such as “Let’s Eat Right to Keep Fit” (1954) and “Let’s Cook it Right” (1947). Her emphasis was on promoting whole foods over processed foods containing additives and promoting the importance of taking nutritional supplements to prevent disease and possibly other social ills. In the early 1900s, vitamins were first introduced, and the concept of their value as dietary supplements grew. It created a new market niche for scientifically supported health products. Congress passed the Dietary and Supplement Health and Education Act in October 1994 to regulate nutritional supplement standards.
