The next stage is to fill the pastry with vanilla or chocolate cream. Additionally, the term “eclair” originated in France. It translates to “flash of lightning,” and some believe the confections were so named because they flew off the racks at the confectioners!
In the nineteenth century, French chef Antonin Carême invented these delectable delights. The story behind the creation of this delectable delicacy is tragic. During the French Revolution, Carême’s parents abandoned him, and he was forced to work as a kitchen servant to support himself. Later, he began working as an apprentice for the renowned patissier Jean Sylvain Bailly. The young child developed into a skilled chef and decided to begin making his own dishes, including the eclair. Since then, eclairs have become a staple of French cuisine, and other nations have also adopted the formula. In countries such as the United States, however, Long Johns are sold as eclairs, which are very distinct from the originals. Typically, vanilla pudding or custard is used to fill Long Johns, which are made from donut pastry. The French eclair, on the other hand, requires significantly more time, skill, and money to prepare.
