The background of National Kale Day

As early as 2000 BCE, kale was being cultivated for human sustenance in Asia Minor and the eastern Mediterranean. In 400 B.C. Greece, cabbage varieties with curly leaves were available alongside those with flat leaves. These early variants are believed to be the ancestors of modern kale. Romans referred to it as Sabellian kale.

The first mention of cabbage in western Europe occurred in the 1200s and referred to cabbage with a solid crown. In documents from the 1300s, the distinctions between loose-leafed kale and hard-headed cabbage are highlighted.

In the 19th century, Russian traders introduced kale to Canada and then the United States. David Fairchild, a USDA botanist, is credited with introducing kale to the United States. He imported it from Croatia despite his distaste for cabbages, including kale. Its prominence in Croatia was due to the ease of cultivation and low cost of the plant. Desalination of the soil was also a significant benefit.

The Dig for Victory campaign promoted kale cultivation in Britain during the Second World War. At the time, the vegetable was ideally suited for cultivation because it supplied essential nutrients that were scarce due to rationing. In the United States, kale was typically used for decorative purposes. In the 1990s, it acquired popularity as a consumable food due to its high nutritional value.

In the 2010s, kale became a diet staple despite the fact that other vegetables are equally nutritious. National Kale Day was created by Chef Jennifer Iserloh and Dr. Drew Ramsey to honor the nutritional value and culinary versatility of kale. They submitted a petition on Change.org to legitimize the observance.
