Did you know it takes 78 calories of fossil fuel to churn out 1 calorie of beef, but just 1 calorie of fossil fuel to produce 1 calorie of soybeans? That is 780 percent more productive than livestock production! Fiber, folic acid, vitamins C and E, magnesium, unsaturated fat, and a plethora of phytochemicals are typically abundant in vegetarian diets, whereas they are not always readily available in meat.
This results in lower cholesterol, a decreased risk of cardiovascular disease, lower blood pressure, and a healthier weight. Meatless diets have a reputation for being tasteless and monotonous, but this is not always the case. Almost any vegetable can be used to make delectable vegetable-based crepes. As long as it doesn’t contain sausage, pizza is still a viable option. Ice cream is transportable. Who said vegetarians can’t enjoy themselves?

At your local farmer’s market, you can find some of the most delectable and fresh vegetables and fruits. With autumn in the air, you’ll be able to locate a variety of meatless foods to suit any taste or disposition (including pumpkin!).
