  • 1 1/2 tablespoons cornstarch

  3. Pour the mixture into a 2-quart saucepan and heat over medium heat until it comes to a simmer. Meanwhile, in a small bowl whisk together the egg yolks and cornstarch.
  4. When the strawberry mixture comes to a simmer, slowly whisk in the egg yolk mixture until well combined. Return the mixture to the saucepan and cook over medium heat until thickened, about 3 minutes. Remove from the heat and strain through a fine mesh sieve into a clean bowl.
  5. Cover with plastic wrap placed directly on the surface of the custard and refrigerate for at least 4 hours or overnight.
  6. Freeze in your ice cream maker according to manufacturer’s instructions
